We are pleased to announce the addition of two new members to the April Point Culinary Team: Executive Chef Kevin Wallace, and Chef-de-Cuisine Ian Murphy.
Chef Wallace is no stranger to our resorts- he has held the position of Executive Chef Painter's Lodge for several years, and will be taking on his new role in addition to his existing role at Painter's Lodge. Chef Murphy, on the other hand, joins us more recently. Together they balance extensive experience with fresh perspective to create a fabulous new Menu in the same stunning setting on Quadra Island.
I've been fortunate to have the opportunity to get to know both Chefs over the past few weeks, and I’m very excited to share a bit of their histories’ with you.
Kevin Wallace’s grandmother once said “if you’re a good cook, you’ll always be working and you’ll never go hungry.” This advice inspired a long culinary journey for Chef Wallace, who began as a prep cook in Canmore, Alberta. After completing a coveted apprenticeship in Lake Louise, he relocated to Vancouver Island to start his own catering company. After 8 years of self-employment, he was appointed executive chef of Mt. Washington Alpine Resort. Painter’s Lodge soon “lured him in” as Executive Chef of our many food outlets. He has now been successfully leading the culinary team for 6 years.

Chef Wallace couldn’t be more eager to apply his proven culinary vision and leadership style to the Dining Room at April Point. With a history of bringing big flavour, familiarity, and west-coast flair to Painter’s Lodge cuisine, April Point is in for a real treat.
Ian Murphy has always loved to eat and to create, so cooking seemed like the perfect fit for him as a profession. Like Chef Wallace, Chef Murphy began his journey as a prep cook in Alberta, where he worked in numerous restaurants before relocating to Vancouver Island to pursue a leadership position as Sous Chef at Modern Café in Nanaimo. After several years he found himself south in Victoria, working as Executive Sous Chef for Victoria Golf Club and Garde Manger at Stage Wine Bar. Looking to further expand his experience, he met with our General Manager Christine Fleming and Chef Kevin Wallace to discuss opportunities with April Point Resort & Spa. And, well, the rest was history. His objective in his new role:
“I hope that I can connect with the community and bring the community to April Point. I am hoping to build relationships with the local farmers, fishermen and tradespeople.” - Ian Murphy
Chef Murphy has experienced and cooked many different styles of food, though he admits that as a young chef his is constantly evolving, and hopes to continue to do so. We can’t wait to see Chef Murphy’s creativity reveal itself on the plate, and are thrilled to have him as a new leader within our Culinary Team.
